Orange Jam Cookie Recipe

Your favorite jam sandwiched between two golden sugar cookies, makes a perfect host or housewarming gift.

Total Time: 20 minutes, plus 20 minutes cooling time
Makes: 18 sandwich cookies


2 cups Hungry Harry's All-Purpose Flour Blend

3/4 teaspoon baking powder

1/4 teaspoon kosher salt

1/2 cup granulated sugar

3 tablespoons powdered sugar

8 tablespoons coconut oil or vegetable shortening, softened, not melted

1 egg or 1 egg replacer, lightly beaten

1 teaspoon gluten-free vanilla extract

3/4 cup of orange jam (or other fruit jam)


Preheat oven to 350ºF.

Combine all the dry ingredients into a bowl and whisk. Add the oil, egg, and vanilla. Mix to combine. The dough will be thick and stiff – you can squeeze it together with your hands to bring it all together.

Roll the dough out between two pieces of parchment paper until they are ¼ inch thick.

Cut dough into circles using a medium-sized cookie cutter, then cutting half of them with the smaller cookie cutter in the middle to create a ring. (We used 2 1/2" and 1 3/4" cutters)

Bake for 6 - 8 minutes, or until the cookies start to turn golden brown.

Cool the baked cookies completely, then layer jam (about 3/4 teaspoon per cookie) onto the larger cookie, sandwiching the ringed cookie on top of the jam.
