Gluten Free & Allergy Friendly Chocolate Zucchini Bread

Our favorite zucchini bread recipe is chocolatey, quick and easy to put together - and allergy-friendly!

1 cup grated or finely chopped zucchini, squeezed dry
1/4 cup oil of choice (if using an oil which is solid at room temperature, like coconut oil, melt it before beginning the recipe)
1/4 cup milk of choice
2 eggs or egg replacers
1/4 cup apple sauce, unsweetened
1/4 cup maple syrup
1/3 cup granulated sugar
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cocoa powder
1/3 cup dairy-free chocolate chips

How To

Preheat your oven to 360° F. Grease a loaf pan with your oil of choice.
In one bowl, mix together the applesauce, maple syrup, baking soda, baking powder, salt, coconut oil, and egg or egg replacer. Set aside.
In a second bowl, add the oil and milk, then add the zucchini.
Mix the two bowls together, then add the Hungry Harry's All Purpose Flour Blend, cocoa powder, and finally, the dairy-free chocolate chips.
Pour the chocolate zucchini bread batter into a loaf pan, and bake until a skewer or knife inserted in the center
comes out clean, about 45 - 50 minutes. Cool, slice, and enjoy!
