Gluten Free & Allergy Friendly Banana Bread Cookies
Preheat your oven to 350°. In a stand mixer with a paddle attachment or with a hand mixer, cream together the banana, coconut oil, sugar, and vanilla until just mixed. In a separate bowl, combine your dry ingredients, and add to the banana mixture, mixing just until it comes together.
Scoop onto a cookie sheet lined with parchment paper and chill briefly, just until the balls of dough are cold. Flatten slightly with your palm and bake for 8-10 minutes, until lightly browned on the edges.
