Gluten-Free + Allergy-Friendly + Vegan - Funfetti Cookies
2 eggs or egg replacer equivalent
1/4 cup melted coconut oil
1 teaspoon allergy friendly vanilla extract
Sprinkles, to taste
Sift your Hungry Harry's Yellow Cake Mix into a mixing bowl. Add eggs (or egg replacer), melted coconut oil, and vanilla extract. Mix all ingredients together. Add sprinkles, to taste.
Line a baking tray with parchment paper. Using a 3/4" scoop, scoop the cookie dough onto the tray, leaving an inch or so between each scoop.
Chill the scooped cookie dough on the tray for 30 minutes.
Preheat the oven to 350 F. Bake for 12 - 14 minutes, turning the tray halfway through.
Cool baked cookies on a cookie rack - enjoy!
