Muffin Mix Directions
Preheat oven to 360F.
Add to 1 cup of mix in a bowl 2 tablespoons of oil of choice, 1 egg or egg replacer, 6 tablespoons of non dairy milk, 1/2 teaspoon of gluten free vanilla.
Mix until blended to a smooth batter. Fold in 1 cup of filling (Harry likes Dairy Free choc chips or bananas or try blueberries!). Mix till combined.
Fill muffin cups 2/3 way full.
For a 12 Mini Muffin Pan: bake for 12-15 minutes.
For a 6 Medium - Large Muffin Pan: Cook for 20-25 minutes.
NB: A whole pack contains 3 cups producing in total, 36 mini muffins or 18 medium- large muffins.
