Cookie and "Ice Cream" Sandwiches

We love this allergy-friendly take on an ice cream cookie sandwich during the summer -
or really, any time of year! Free from the top 14 allergens, these sandwiches use Hungry Harry's
All Purpose Flour Blend for cookies that everybody can enjoy.

Cook Time: 10 minutes
Freezing Time: 1 hour
Total Time: 1 hour 20 minutes
Yield: 20 small ice cream sandwiches

Ingredients

1 pint allergy-friendly sorbet or ice cream
1 cup allergy-friendly chocolate chips

How To

Scoop 1 ounce of allergy friendly sorbet or ice cream onto the underside of a cookie.
Top with another cookie, and sprinkle the remainder of the exposed sorbet or ice cream with the chocolate chips. Freeze for one hour.
