Gluten Free + Allergy Friendly Waffles
1 egg or egg replacer
3/4 cup milk of choice
1 teaspoon oil of choice (note: if using an oil that's solid at cool temperatures, like coconut oil, melt the oil before beginning this recipe)
1/2 teaspoon gluten-free vanilla extract
Add 1 cup pancake/waffle mix in a bowl.
Add 1 teaspoon of oil, 1 egg or egg replacer, 3/4 cup of milk, 1/2 teaspoon of gluten-free vanilla.
Mix well until blended into a smooth batter. Grease your waffle iron lightly and plug it in. Allow the waffle iron to heat up.
Use a 1-inch ice cream scoop and portion out 2 - 3 scoops for each waffle. Cook in the waffle iron until golden brown. Serve and enjoy!
