Gluten Free & Allergy Friendly Vanilla Cake Frosting

Made with coconut oil. This vanilla frosting is smooth, sugary goodness, and virtually indistinguishable from classic buttercream!

Makes: about 3 cups, enough for a 9" x 13" sheet cake

Ingredients

1/4 cup unrefined coconut oil
3 1/2 cups powdered sugar (16 oz)
1/4 cup milk of choice
1 teaspoon vanilla extract

How-To

With a stand mixer or hand mixer, beat the coconut oil until light, fluffy, and smooth. Continue to beat and slowly add half of the powdered sugar, the vanilla, and half of the milk. Slowly add the remainder of the powdered sugar, and then the remainder of the milk.

Beat until completely smooth and lump-free.

Before icing, make sure your cake is completely cooled. Coconut oil melts easily and quickly, leaving a huge mess in your kitchen!
