A zesty lemon and orange cookie dough that comes together quickly to make a bright dessert ready in just 20 minutes!

Makes: 25 mini cookies

Ingredients

3/4 teaspoon baking soda
1/4 teaspoon kosher salt
1/2 cup granulated sugar
3 tablespoons confectioners sugar
1/2 cup coconut oil or vegetable shortening, soft but not melted
1 egg, lightly beaten, or 1 egg replacer
2 tablespoons orange juice
2 tablespoons lemon juice
Zest of 1 orange
Zest of 1 lemon

How-To

Preheat your oven to 360°F.

Beat the coconut oil or shortening with the sugar on medium speed, until light and fluffy, about 1 minute.

Add the egg and vanilla, then drizzle in the citrus juices and zests. Mix together the flour, baking soda, and salt in a separate bowl, then fold into the mixture.

Scoop into desired size onto a cookie sheet lined with parchment paper. Flatten them lightly with your palm.

Bake for 8 - 10 minutes, or until browned on the bottom.
