Preheat your oven to 360° F.
Beat the coconut oil or shortening with the sugar on medium speed, until light and fluffy, about 1 minute. Add the egg and vanilla, then drizzle in the citrus juices and zests. Mix together the flour, baking soda, and salt in a separate bowl, and fold into the mixture.
Scoop into desired size onto a cookie sheet lined with parchment paper, and flatten lightly with your palm.
Bake for 8 - 10 minutes, or until browned on the bottom.
