Gluten Free + Allergy Friendly Pancakes and Waffles
Add 1 cup pancake/waffle mix in a bowl.
Add 1 teaspoon of oil of choice, 1 egg or egg replacer, 3/4 cup of milk of choice, 1/2 teaspoon of gluten-free vanilla.
Mix well until blended into a smooth batter. Grease a frying pan on medium-high heat or turn on your waffle iron.
Use a 1-inch ice cream scoop and portion out 2 - 3 scoops of batter for each pancake or waffle. Cook for 2 minutes on each side or until golden brown.
