For the Crust

  1. 1 1/4 cup Hungry Harry's All Purpose Flour Blend
  2. 1/2 cup allergy friendly butter replacer or coconut oil, softened

  3. 1/4 cup powdered sugar

  4. 1/2 teaspoon vanilla extract

  5. 1/4 teaspoon salt


For the Filling

  1. 1/3 cup Hungry Harry's All Purpose Flour Blend
  2. 1/4 cup allergy friendly butter replacer or coconut oil
  3. 3/4 cup granulated sugar

  4. 1/2 cup lemon juice – from 2 large lemons

  5. zest from 2 lemons

  6. 1 teaspoon baking powder

  7. 1/8 teaspoon salt

  9. powdered sugar, for dusting


  1. Preheat oven to 350F. Grease 8×8 glass baking dish, or fully line with parchment paper.

  3. In a large bowl, stir softened butter replacer, powdered sugar, and vanilla. Add flour and salt and stir until combined.

  4. Press into bottom of baking dish, reaching up the edges of the dish about an inch (to prevent filling from going beneath crust). Refrigerate for 30 minutes. Bake for about 25-30 minutes, or until light golden brown.

  6. While crust is baking, prepare your filling. In a large bowl, whisk together melted butter replacer, sugar, lemon juice, and lemon zest.

  8. In a small bowl, stir together flour, baking powder, and salt. Whisk dry ingredients into wet until combined. Pour over warm crust, and bake for 18 - 20 minutes, or until bubbles have formed all over the top, and bars have begun to set. (The middle may still be a bit jiggly, but will set up more as it cools.)

  10. Cool completely in pan on a wire rack, or chill in refrigerator. Cut into 16 2" x 2" squares with a sharp knife. Dust with powdered sugar immediately prior to serving (this will also help cover up the bubbles!). These are best served chilled.
