Allergy Friendly + Gluten Free + Vegan - Cookie and "Ice Cream" Sandwiches

We love this ice cream cookie sandwich during the summer… perfect for BBQs, pool days, and picnics. Or maybe you’ll eat one right out of the freezer!

Free from the Top 14 Allergens, these sandwiches use Hungry Harry's All-Purpose Flour Blend for cookies that everybody can enjoy.

Makes: 20 small ice cream sandwiches

Ingredients

1 pint allergy-friendly sorbet or ice cream

1 cup allergy-friendly chocolate chips

How-To

Scoop 1 ounce of allergy friendly sorbet or ice cream onto the underside of a cookie.

Top with another cookie. Sprinkle the remainder of the exposed sorbet or ice cream with the chocolate chips. Freeze for one hour.
