Gluten Free & Allergy Friendly Date & Orange Bread

We love this slightly-grown-up date and orange bread for its rich flavors, soft texture, and, of course, allergy friendliness! Perfect any time of year, but especially when you're looking for a quick and easy bake to bring to the holiday party.

Yield: 1 loaf


1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon orange zest
3 cups dates
1 teaspoon allergy friendly vanilla extract
1/4 cup vegetable oil
1 tablespoon apple cider vinegar
1 egg or egg replacer
1/2 cup orange juice

How To

Preheat your oven to 360° F. Grease a loaf pan with your oil of choice.
Remove pits from the dates and place in a small saucepan. Cover with water and simmer for 20 minutes.
Drain the water from the dates and puree - you should have about 1 1/2 cups of date puree.
Combine all wet ingredients in one bowl, and all dry ingredients in another.
Fold the dry ingredients into the wet, mixing well.
Pour the mixture into your prepared pans, and bake until a knife or skewer inserted in the center comes away clean, about 45 - 50 minutes.
Cool at room temperature, and enjoy!
Note: This recipe works great in any shape - muffins, cake pans, or loaves. Just adjust your baking time to account for the change in size!
