Allergy Friendly + Gluten Free + Vegan - 'Crepes'

Thin pancakes, stuffed full of sweetness, rolled or folded for an easy, elegant breakfast. Enjoy plain, or sprinkled with confectioners sugar.

Total Time: 25 minutes
Yield: 10 8" crepes


1 1/2 cups rice milk
1 egg or egg replacer equivalent
1 teaspoon rice bran oil
2 teaspoons granulated sugar


In a large bowl, whisk all ingredients together until no lumps remain.

Heat a non-stick pan to medium-high, then spray with allergy friendly pan spray.

Drop 1/8 cup to 1/4 cup of batter in the pan, depending on how large you want the crepe, then swirl the pan quickly to make it as thin as possible without cooking it.

Put the pan back on the stove, and cook until the edges start to pull away, about a minute.

Using a rubber spatula, flip and cook the other side for ten seconds. Enjoy!
