Allergy Friendly + Gluten Free + Vegan - Chocolate Sandwich Cookie Recipe

Homemade, crunchy chocolate sandwich cookies with a creamy center that everyone will love!

Total Time: 1 hour 45 minutes, including cooling
Makes: 20 small chocolate sandwich cookies

1/2 cup allergy friendly butter replacer or coconut oil, soft but not melted
1/2 cup granulated sugar
3 tablespoons honey
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1/3 cup plus 1 tablespoon cocoa powder


Preheat the oven to 350˚ F.

Using an electric mixer, combine the coconut oil/butter replacer, sugar, honey, baking soda, and salt. Set aside.

In a separate bowl, sift the flour and cocoa together.

With the mixer on low, slowly add the dry ingredient mixture to the coconut oil/sugar mixture.

Wrap the dough in plastic and chill for at least 1 hour.

Dust your counter or work surface with cocoa powder. Roll the dough to 1/4" thick with a rolling pin (use an embossed rolling pin for a more familiar design!). Cut in circles and bake for 8 - 10 minutes, turning the tray halfway through.

Cool completely and sandwich with the vanilla frosting. Before serving, refrigerate the finished cookies for another 15 minutes - this will help keep the frosting from squishing out of the cookie!
