Gluten Free & Allergy Friendly Chocolate Orange Valencia Cookies
Combine all the dry ingredients in a bowl and whisk. Add the oil, egg, vanilla, orange extract, juice, and zest, and mix to combine. The dough will be thick/stiff – you can squeeze it together with your hands to bring it all together.
Scoop the dough into balls just smaller than a golf ball, and flatten with your palm. Place on a parchment lined sheet tray and bake at 350 degrees for about 6 to 8 minutes until just starting to brown.
Melt the chocolate in the microwave in 15 second bursts until completely melted. Dip the cookie halfway into the chocolate, and cool on a cooling rack until the chocolate has set.
