Yellow Cake Cupcakes

Ingredients
Hungry Harry's Yellow Cake Mix (1 x 17 oz package)
2 eggs or egg replacers
1/2 cup oil of choice
1 cup milk of choice
1 teaspoon gluten-free vanilla extract
Note: If using an oil that's solid at cool temperatures, like coconut oil, melt the oil completely before beginning this recipe. Rice bran oil will give a lighter cake and is recommended for cupcakes. Coconut or vegetable oil will help with structure.
How To:
1. Preheat your oven to 360°F. Line a cupcake pan with paper liners.
2. Sift the Yellow Cake Mix into a large bowl. Add the eggs, oil, vanilla, and milk. Mix well until a batter forms.
3. Pour the yellow cake batter evenly into the cupcake pan, filling each cup 2/3 full.
4. Bake for 25 minutes, until a toothpick comes out clean.
5. Cool completely before removing the cupcakes. Frost and enjoy!
