Chicken & Waffles

Enjoy this savory Southern stack of fluffy waffles and crispy fried chicken made the easy way.

Ingredients

For the Waffles

1 cup Hungry Harry's Pancake and Waffle Mix (1/3 of a 17 oz package)

1 egg or egg replacer

3/4 cup milk of choice

1 teaspoon oil of choice (note: if using an oil that's solid at cool temperatures, like coconut oil, melt the oil before beginning this recipe)

1/2 teaspoon gluten free vanilla extract

For the Chicken

2 pounds bone-in chicken (drummettes and wingettes)

1 teaspoon kosher salt

1 teaspoon ground black pepper

2 cups Chobani Oat Milk - Plain Extra Creamy

For the Coating

2 cups Hungry Harry's All Purpose Flour Blend

1 teaspoon kosher salt

1 teaspoon ground black pepper

2 teaspoons garlic powder

1 teaspoon onion powder

2 teaspoons dried thyme

1 1/2 teaspoons paprika

Non-stick cooking spray or oil

How To:

1. Prepare your chicken by seasoning each piece with salt and pepper.
2. Submerge the seasoned chicken in a large bowl of Chobani oat milk. Allow to marinate, covered in the refrigerator, for at least an hour, or up to overnight if planning a day ahead.
3. Prepare the dry coating by sifting together the All Purpose Flour Blend, salt, pepper, garlic powder, ground thyme, and paprika in a medium sized bowl. Set aside.
4. Remove the chicken from the marinade and shake off excess liquid. Dredge each piece evenly in the flour mixture. Be sure to coat well. Allow the chicken to rest for 2 minutes.
5. Working in batches, spray your air fryer's basket with non-stick cooking spray. Arrange chicken pieces in the basket, careful not to let them touch; air needs to circulate to allow them to cook properly.
6. Before cooking, lightly spray the chicken pieces with the cooking spray. This keeps the flour coating from burning and allows the breading to crisp nicely.
7. Place the basket in the air fryer and set to 350° F. Cook for 8 minutes. Carefully flip each piece using tongs, spray again, and cook for another 6 minutes. Note: larger pieces, such as thighs, should be cooked for 12 minutes on each side. Chicken is done when a meat thermometer shows an internal temperature of 165° F for white meat, 175°F for dark meat. After carefully removing the chicken, allow it to rest while you prepare the waffles.
8. To make the waffles, sift 1 cup Pancake and Waffle Mix into a large bowl. Add oil, egg, milk, and vanilla. Mix well until batter is smooth.
9. Heat a greased waffle iron (see manufacturer's instructions). Carefully portion out 1/4 cup batter in the center of the waffle iron, careful not to overflow when the lid closes. Cook until golden brown.
10. Repeat until you have enough waffles for the number of people being served, then plate alongside the chicken and enjoy!
